I enjoy green tea and the many delicious forms it can take: a straight-forward cup of hot tea, a scoop of refreshing ice cream, a slice of fluffy chiffon cake… Matcha (抹茶), a finely powdered green tea, is the usual choice for making green tea flavored confections. If you have seen matcha in the supermarket (Japanese markets definitely, occasionally in some specialty Western grocery stores), you may know that it can be pretty expensive. A little goes a long way, however.
White Chocolate Matcha Cookies

Ingredients
- 1⁄2 c granulated sugar
- 1⁄2 c margarine, softened (1 stick)
- 2 tbsp milk* (see notes)
- 2 tsp vanilla extract
- 1 c + 3 tbsp all-purpose flour
- 1 1⁄2 tsp baking powder
- 2 tbsp matcha powder
- 2oz Baker's premium white baking chocolate, grated finely* (see notes)
- 1 pinch salt
- powdered sugar for dusting
Equipment
- large mixing bowl
- small mixing bowl
- hand-held or stand mixer
- cheese grater
- spatula
- cookie sheet
- parchment paper
- small bowl (for powdered sugar)
- wire rack
Instructions
- Combine margarine and granulated sugar in mixing bowl. Mix until light and fluffy.
- Add vanilla extract, milk and white chocolate to margarine/sugar mixture.
- Combine salt, baking powder, matcha powder and 1 cup flour in separate mixing bowl.
- Add the dry ingredients to the wet, mix until well combined. Scrape sides of bowl with spatula as necessary. Dough will be sticky.
- Add extra flour as needed until dough becomes less sticky (up to 3 tablespoons).
- Cover bowl with plastic wrap and place in refrigerator for at least one hour to chill.
- When ready to bake, preheat oven to 350°F (180°C) and line cookie pan with parchment paper.
- Form 24 equal-sized balls (about 1/2 inch diameter),
- Roll each ball in powdered sugar and place on cookie sheet.
- Bake for 8-10 minutes until bottom is lightly golden.
- Let cookies cool slightly on cookie sheet, then transfer to wire rack to cool completely.
Notes
- This time, I substituted coconut milk. Sometimes I use almond milk. I happened to have the baking chocolate on hand so I added it to the cookie dough. This recipe works without the chocolate too, the cookies are a little less sweet.
